Our Trade Secrets to the Ultimate Roast Potatoes

Making delicious roast potatoes isn’t difficult if you follow our recipe and one thing’s for sure, if you can master the perfect roast potatoes, you’re well on your way to the perfect Christmas dinner.

 

Ingredients:

1kg Maris Piper or  Desiree Potatoes
100g meat joint or duck/goose fat (for a luxurious taste)
Maldon salt, to serve

 

Method:

In order to make luscious Roast Potatoes ensure you have a good quality potatoes, preferably the Maris Piper or Desiree. Carefully peel the potatoes and cut them to the size you prefer.

Blanch the potatoes in a pot of boiling salted water until the edges of the potatoes are cool but still a bit hard in the middle, then drain the potatoes off and let them dry out for a few minutes.

While you are waiting for the potatoes, put your roasting pan on top of the stove and heat up the fat you are going to roast them in. We recommend to use the fat from the meat joint you are cooking (e.g. beef dripping) if not duck or goose fat will do the job.

At this stage the potatoes are dry, so give them a good shake just to break up the edges slightly so they all get nice and crispy.

Once the fat is hot put the potatoes in and almost fry them a little on all sides, once lightly coloured and sealed off put them in the oven to cook through for 50 minutes.
